Chef Gonçalo Pinto
It was 2003 when he started his Cookery and Pastry Techniques course in Lamego. As part of his practical training, he worked at the Vidago Palace Hotel in Vidago and Casa da Calçada in Amarante.
With drive and enthusiasm, she worked alongside Chef Rui Paula for over 11 years. He opened the DOC restaurant (Degustar, Ousar e Comunicar), nicknamed the “Window on the Douro”. He stayed there for seven years, then, still under the signature of Chef Rui Paula, as resident chef, he went to Brazil and shared his gastronomic knowledge in Angola.
His roots called him back to the Douro, to Quinta de Ventozelo in São João da Pesqueira, known as the “Theater of the Senses”.
His journey meant that his time in the Douro didn’t end there and he was Chef at Quinta do Bomfim, in Pinhão.
The year 2024 arrived and here came the turning point. He joined the team at Borralha Restaurante to revolutionize the cuisine, while always respecting the values of the house. His future strategy is to preserve what is local and traditional.
